Indian black salt, or kala namak, is an Indian volcanic rock salt, known by the names including Himalayan black salt, sulemani namak, and kala loon. It’s commonly used in Pakistan, India and other Asian countries. It starts out as Himalayan Pink Salt or sodium chloride and is then heated to extremely high temperatures, mixed with Indian spices and herbs including the seeds of the harad fruit which contains rich levels of sulfur. In addition, Indian Black Salt also contains trace impurities of sulfates, sulfides, iron and magnesium which all contribute to the salt’s color, smell and taste.
Some varieties of black salt, such as black lava salt, are black in color, but many aren’t. In its rock form, it ranges from brownish-pink to deep purple color. When the salt is grounded up, it becomes a pinkish-gray or light purple color. When mixed up with food, it becomes a deep red with purple and brown tints. The color is due to the iron sulfides contained in black salt.

The taste of Indian black is very quite comparable to hard-boiled eggs due to the sulfur levels. Due to the distinctive, egg like taste, black salt is often used and makes a great addition in eggless recipes and a perfect addition to salads.
Since ancient times, Indian black salt has been used and is said to have been identified by the father of Ayurvedic medicine, Maharishi Charak, around 300 B.C.E. Some claims from Ayurvedic healers that this type of black salt can be therapeutic, too. Black salt is considered a cooling spice and it is used as a laxative to help with digestive problems, poor eyesight and hysteria. Black salt contains less sodium than table salt so it can be helpful for people with high blood pressure and good for those who are diabetic.
