My 15th Birthday Recaps: Tofu Dates Swirl Cheesecake & Raw Pizza Bites (1 recipe + one exclusive recipe!)

As you may already know from my previous post, my birthday was on May 10. I would love to share with you what I did and enjoyed on my 15th birthday (a.k.a my first raw vegan birthday!) So, in this post, I’ll just be rambling about what happened on my 15th birthday. Plus, a lots of photos! So, here it goes… 
 
On Friday, May 10, I turned 15 years old. I had a blessed, fun day. I went to the movies, went SpeedWay Racing with my dad, made some rawesome pizza (recipe is below), enjoyed my Tofu Dates Swirl Cheesecake (recipe is exclusive, so you’ll only find it in my first free raw desserts e-book). And the greatest gift I received was…. *drum roll, please* LOVE!! <3 I also got many great birthday wishes from my family and my cute lil’ pup. He’s such a lover! He even wished me happy birthday. He showed it in a way by giving me 15 kisses. Meet the cutie pie boy:

The SpeedWay Racing was like totally epic. I went with my dad, and we were both newbies on the track. We both went at neutral speed. We didn’t go as fast as we should have, but its all good. I was confident driving, but my stats were not so good. There were 5 racers on the track, and 3 out of 2 were going fast. My dad and I were like literally letting everybody pass us, rather then trying to pass them! I guess we never got the memo that we are in a Speed Race, so obviously – we needed to go faster! But we ended up going again on a Friday, but this time – we both raced differently. I was going way faster then I did the first time. I don’t know WHAT I was thinking by racing slow. I guess I went by the old mantra; “slow and steady wins the race!” Well in this race, it’s NOT the case. 
But my dad and I have fallen in love with this new SpeedWay Racing place that recently opened near us. It’s like our new thing. We go every Friday pretty much. Oh, and my dad and I got our license – to drive there! Since it was my birthday, I got a free birthday race for the next time I went. It was awesome! If you haven’t been there and have the confidence to race with other racers – I recommend giving it a try! It’s so much fun! You may or may not like it. I love it. 
 

I made my e-book cheesecake recipe the day before my birthday (on Thursday)… so I was able to enjoy my first cheesecake piece right ON MY BIRTHDAY! How cool is that (well for me anyways :P)?! My birthday dinner was raw pizza bites inspired by my old version that I posted on my blog before. For my birthday pizza, I used cucumbers as the crust (nothing new; I did the same for my other recipe, which is linked above), made my rawesome cheddar cheese a.k.a hummus, spinach pesto, broccoli, sprouts, tomatoes, and tofu. I just LOVE this pizza recipe. It’s my favorite. I can literally eat it every day for dinner if I could. That’s how delicious it is. And for my dessert, (of course I had dessert on my birthday. that’s kinda mandatory for a great birthday. a healthy one at that 😉 

I enjoyed my Tofu Dates Swirl Cheesecake (recipe found in my first e-book. Unfortunately, i’m not posting the reicpe on my blogs as i made that clear in my book post. if you want the recipe, SUBSCRIBE to this blog, then i’ll send you over my book. but hey, I will share the pictures with you, though.) Although, I probably should of called this recipe, “Tofu Dates Swirl Cake” instead of cheesecake. Its all good though. Too late now to change the name. It was SO delicious! I really enjoyed it. Just looking at the photos are mouth watering! Gosh, if only we could snap our fingers as the food we crave immediately appears. Only in my sweetest dreams. Hey, can’t a girl dream?

Before I ate this, I actually acted like I didn’t even know how my birthday dessert would turn out. I acted as if I didn’t make it, and I had no clue what was in store for me. So, as I served it on my plate and ready to eat it, I was surprised. As I took my first bite, I was in birthday dessert heaven. I was a happy birthday girl enjoying my birthday cake. I even ended up sharing my cheesecake with my mom and brother. My mom really enjoyed it, but my brother told me he doesn’t like chocolate. Weirdo, I know. I was super happy to hear that my mom really enjoyed my cake. I gave and shared with her a cake piece as a Mother’s day gift. She loved it. I wanted it to be special for my mom anyways. I couldn’t be happier at that moment. It felt as if I re-celebrated my birthday on Sunday. I was born on mother’s day actually, so I think that made the moment special for my me and my mom. Plus, that means a LOT coming from her, as she’s my toughest critic. It was surprising actually that she loved it. My mom isn’t a fan of chocolate, so that was great news.

This birthday year was my first birthday being a raw vegan! My first year being a raw vegan on my birthday! How exciting is that – for me?! I had a great wonderful day on Friday (and weekend)! I went to the movies, car racing, shopping, then came home to make my birthday food (it was a food fiesta you can say!) and then enjoyed my delicious cheesecake. For my birthday dinner, I enjoyed my favorite raw pizza and my e-book cheesecake! Soooooooooo delicious!!! You gotta try it. Hey, the pizza recipe is below so you can go and make it yourselves. Overall, I had a fun and blessed day, filled with all guilt-free rawesome foods. I was a happy birthday girl.  =)

Now, onto the pizza recipe, shall we?!

Raw Vegan Pizza Bites with Cheddar Cheese, Spinach Pesto & Other Goodies {Improvised}:
makes 4 pies, serves 2-4 (2 pies = 2 cucumbers. 4 pies = 4 cucumbers. every one cucumber is considered a pie. get it?)
 
Crust:
4 cucumbers or zucchini, peeled with ends removed 
 
Cheese: (use the recipe below or this one. both are very delicious)
1 cup cashews or brazil nuts 
1 whole red pepper
1/2 cup apple cider vinegar
1/2 cup nutritional yeast
1/4 cup water (try to add as little as possible)
3-4 large peeled garlic cloves
1 tsp each: sea salt, all purpose seasonings, turmeric & paprika (optional, but really recommended for taste & flavour)
 
Spinach Pesto:
1 head of organic spinach, ends removed
2-3 large garlic cloves, peeled
1 jumbo date, pitted
1 tsp sea salt and all purpose seasonings
1 tbsp water

Toppings: (add what you like, but this is what i added to my pizza):
3 heirloom tomatoes
1 avocado 
1 head of organic broccoli, chopped up into small pieces
1 package of organic, non-GMO tofu 
sprouts such as alfalfa 
nutritional yeast & all purpose seasonings
 
to make the Pesto: wash the spinach prior to blending it. place all your ingredients in your blender, and blend until creamy and smooth, but not completely smooth. Pour in a bowl and store in the fridge while you make the cheese. 
 
to make the Cheese: place all ingredients in your blender, and blend until creamy and smooth. TASTE. YUM! Adjust to your taste buds. Place in a bowl and store in the fridge until you’re ready to put your pizza together. 
 
for the Toppings: wash your tomatoes, chop them and place them in a bowl. Set aside. 
Drain the water from the tofu package, and place in a bowl. Using a fork, smash the tofu into crumbles, seasoning it up and tasting it. Smash and mix until the tofu looks like tofu scramble. Set aside in the bowl. 
Wash your broccoli, and chop it up into small chunks (pieces). Place it in a bowl and set aside. 
And prepare anything else you’d like to add to your pizza. Remember, this is YOUR pizza; decorate it however you want it. 
 
for the Crust: peel and cut off the ends of the cucumber. using a sharp knife or a mandolin slicer, slice thin or thick slices (however you like. i like thin slices myself) and set aside on a pizza tray or your plate. 
 
to Assemble: take a cucumber slice, and spread the cheese, pesto and add the toppings as you wish. Repeat this for every pizza cucumber slice and enjoy!

  3. That cake and those pizza bites looks scrumptious. I love raw pizza, but usually it takes a lot of preparation with sprouthing, dehydrating etc. for the crust. I love you idea of just using zucchini or cucumber. X

    • Thank you, Sonja! I agree with you – raw pizza does take a lot of preparation, (even this one) but its well worth it in the end. 🙂 Thanks, using cucumbers is a great idea. It makes the pizza a whole lot easier cause its not as time consuming as the dehydrating ones. X
