If the name and look of these wraps don’t open up your appetite or taste buds, I don’t know what does. These wraps are seriously the best and most epic wraps I’ve ever made (well, one of the most epic wraps I’ve made, because I’ve made a few in the past that were the bomb!). They’re great for lunch or dinner. They’re filling, healthy, nutritious, delicious, low-fat, and gourmet!
I made these wraps a while ago last summer so don’t quote me exactly on everything I added. Looks like I added like 3 different spreads on the wraps if you look at the pics closer… Use whichever geese recipe of mines that you like.

Epic Fiesta Wraps Recipe
Organic romaine lettuce or swiss chard leaves for the “wrap”
Mung Bean Hummus Salsa
- 1 1/2 cups marinated TruRoots Mung beans
- 1 whole red bell pepper
- 1/4 piece of red onion
- 1/4 cup apple cider vinegar
- 1/8 tsp sea salt
- 3-4 tablespoons buckwheat flour
- 1 tbsp mixed organic herbs, seasonings and spices
- Marinated mung beans
- diced cucumber
- diced tomato
- guacamole or sliced/diced avocado
- raw coconut butter (optional, tastes like mozzarella cheese!)
- red onion, diced into small chunks and marinated in lemon juice freshly squeezed and/or apple cider vinegar
To Make The Salsa: place all ingredients in a high-speed blender and blend until creamy and smooth. Pour into a bowl and set aside.
To make the Wrap: peel, cut, chop, and dice all the ingredients. Spread the salsa onto the lettuce leaf, and top if off with a few heaping tablespoons marinated mung beans, diced cucumbers, tomatoes, avocado, and any other veggies you want. Red onion marinated in these wraps would be amazing. Get creative and wrap it up and enjoy!
